Noma is returning to Copenhagen after a few months of their residency in Los Angeles.
The Noma team has announced that it will reopen its Copenhagen restaurant on 5 August 2026. The announcement marks the next step for a restaurant that has spent the past few years publicly rethinking its future, moving between international residencies, research projects and the question of what Noma can become after more than two decades at the top of fine dining.
The new chapter comes with a clear change in leadership. Mette Brink Søberg will become Head of R&D, Pablo Soto will take on the role of Executive Head Chef, and Annika de Las Heras will step in as CEO. René Redzepi remains part of the project as creative director, but the daily running of the restaurant is being handed to a new generation that has already helped shape Noma from within.

The restaurant is also changing its rhythm. For years, Noma’s Copenhagen calendar was built around three major seasons. The next version will move toward twelve seasons, with each month treated as its own creative frame. August will begin the cycle with menus shaped around late summer and early autumn in Denmark: berries, flowers, vegetables and seafood in August, moving toward mushrooms, stone fruits, game and shellfish as the season deepens.
It is a meaningful shift for a restaurant that has spent more than twenty years building its work around seasons, landscapes and the particular mood of a given place. Until now, that rhythm has largely been organised through three distinct seasons across the year. The new model expands that idea into twelve expressions of Noma, with each month shaped by the ingredients, landscapes and ideas present at that moment. According to the restaurant, the aim is to stay closer to nature and to its own curiosity. August becomes the first test of that new rhythm.
The reopening follows a difficult period for the Noma group. Its Los Angeles residency arrived during renewed scrutiny of René Redzepi’s leadership and past workplace culture, after former employees described harmful conditions and abusive behaviour in earlier years of the restaurant. Redzepi has acknowledged causing harm and has stepped away from daily operations. Noma’s return to Copenhagen will therefore be read through two lenses at once: as a creative relaunch and as a test of whether structural change within one of the world’s most influential restaurants can sustain its position without the leader who led it to its heights.
The practical details are already in place. Noma will open from Wednesday to Saturday, with reservations for 5 August through 31 October released on 24 June at 6 pm CEST. The menu is priced at 4,500 DKK, with wine pairing at 2,000 DKK and juice pairing at 1,500 DKK.
For Copenhagen, the reopening restores a restaurant that has shaped how the city is understood by the dining world. For Noma, it begins a more demanding chapter: twelve seasons instead of three, an even faster creative cycle, and a new leadership team carrying a name loaded with influence, expectation and unresolved questions. August is where the next Noma begins. It will show how much force this next version of Noma is ready to hold.
