The restaurant’s name is inspired by a flowering Andean tree that grows at extreme altitudes, symbolising the resilience and beauty of Peruvian nature.
While her work at Central focused on ingredients strictly separated by altitude, León’s approach at Kjolle is more fluid. She blends produce from diverse ecosystems—the Amazon, the Andes, and the coast—often in the same dish to showcase Peru's plurality. Her kitchen philosophy is described as "simple, but not easy," reflecting a commitment to minimal manipulation of high-quality ingredients.

This simplicity is backed by intense scientific research conducted by Mater Iniciativa, the interdisciplinary centre she leads alongside Virgilio Martínez and Malena Martínez. Their work involves mapping Peru’s biodiversity and finding sustainable uses for every part of an ingredient. For example, the team has spent years researching the cocoa fruit to ensure that its shell, pulp, and leaves are utilised alongside the beans, minimising waste.
